Masterfully engineered to endow the pure cocoa butter with the perfect crystal structure, these machines ensure flawless processing and extraordinary structural stability post solidification and packaging.

Details
The machine features an advanced feeding pump positioned in front of the chocolate tempering unit, efficiently channeling chocolate paste into the thermostat. This unit boasts revolving plates, mounted on a main shaft driven by a robust motor. The plates are cleverly housed in independent, stainless steel, double-jacketed compartments, through which a controlled stream of chilled water flows. As the chocolate circulates, a delicate layer is created between plates and compartment, where precise temperature control across various zones enables rapid cold transfer, forming Beta crystals and perfectly tempering the chocolate. The same chocolate is then directed to molding or enrobing units, with any surplus being returned to a prior storage tank.
