Details
The strategically positioned feeding pump, located at the forefront of the chocolate tempering machine, is tasked with channeling the chocolate paste into the advanced thermostat unit. This unit boasts revolving plates, ingeniously mounted on a main shaft powered by the main shaft motor. These plates reside in separate stainless steel double-jacketed compartments, where chilled water flows at a meticulously controlled constant rate. A delicate, wafer-thin layer of chocolate elegantly circulates between the plates and the compartment. The Chocolate Tempering Machine's design features distinct zones, each with precisely regulated temperatures, allowing the cold to swiftly permeate the chocolate. This rapid cooling induces the formation of Beta crystals, resulting in perfectly tempered chocolate. This same process seamlessly supplies chocolate to the molding or enrobing unit, while any unused chocolate gracefully returns to the original storage tank.
